I am a tea drinker, but rarely do I ever have a cup of hot tea. I make it and then look at the time and start to panic, and rush us all out the door. I treasure my weekend morning where I get breakfast ready and then sit down and have it with my hot cup of tea.
Popovers are really good hot too.
But it's these scones that make it to breakfast so often during the week. I make a double batch on Sundays and store them in a tin for the rest of the week. I always make them for overnight guests and people always ask me for the recipe.
Oatmeal Scones (double recipe, makes 16 scones) They freeze well too.
Mix...... 2 cups rolled oats
1 cup yogurt
2 eggs in a bowl
In an other bowl sift
1 cup whole wheat flour
1 cup white flour
1 tbsp baking powder
1 tsp soda
1/2 tsp salt
1/2 cup brown sugar (white works fine)
Grate 1 stick of butter into the flour mixture and toss.
Mix the oatmeal mixture (anything else like currants, nuts, dried cherries at this point as well) with the dry ingredients and dump out onto a floured work surface. Knead it a few times and then cut it in half and shape it into two flat discs about 1 1/2 inches thick.
Cut each disc into 8 wedges and transfer then to a cookie sheet.
Bake for 18-25 minutes at 425. We like them with jam or honey.
